Breakfast doesn’t have to be boring, nor do you need to spend a lot of time preparing one your family will love. Making a tasty, healthful and gourmet breakfast is easy with this peach and spinach recipe that serves six!
1 clove minced garlic
1 small onion, very thinly sliced
1 tablespoon olive oil
6 ounces fresh spinach, cooked (about 3/4 cup) drained and chopped, or one 10-ounce package of frozen spinach, thawed and squeezed dry
1/2 teaspoon salt
1/4 teaspoon freshly ground black pepper
1/8 teaspoon ground nutmeg
2 large fresh peaches, pitted, peeled and sliced
2 tablespoons water
1 tablespoon finely minced fresh basil leaves
1/4 cup shredded Swiss or Muenster cheese
Lightly sauté garlic and onion in olive oil a heavy, ovenproof 10-inch skillet or fry pan. Add spinach, squeezed dry, and heat through. Stir in salt, pepper and nutmeg and remove pan from heat.
Arrange peach slices on top of spinach mixture. Beat eggs lightly with water in a bowl and pour the egg mixture the spinach mixture, then sprinkle with the shredded cheese. Bake at 325° F for 30 to 45 minutes or until set and cut into wedges to serve.
