6 tomatoes, diced
2 tablespoons olive oil
8 Kalamata olives, finely diced
8 large leaves of fresh basil, chopped
2 teaspoons balsamic vinegar
1 small garlic clove, minced
dash of salt
Combine ingredients and let stand at room temperature for one hour. Adjust seasoning. Serve on toasted rounds of French bread, topped with a pinch of grated Parmesan cheese.
Hot Artichoke Dip
Chop canned, well-drained, marinated artichoke hearts into quarters or smaller. Add just enough fat free mayonnaise and grated Parmesan cheese to hold together; heat through slowly and serve with crackers.
1 8-ounce package Philly fat free cream cheese
1 6-ounce can crabmeat, drained and flaked
1 tablespoon milk
1/2 teaspoon horseradish
Squirt lemon juice, dash salt
Dash Tabasco sauce
Combine ingredients and heat through over low heat, stirring frequently.
Mash four avocadoes, add garlic salt, chopped cilantro and finely minced onions to taste, then add a few tablespoons of fat free cream cheese and stir well. Serve with yellow or white corn chips, and get ready to receive compliments!
